If you want to bring this beet and hummus layered salad with you to work for lunch the following day, all you have to do is store it in the refrigerator overnight before you go. Because of its elegant appearance, this dish is ideal for serving at special occasions or gatherings.

Best of luck!

Time required for preparation: 10 minutes

Cooking time: 25-30 minutes (time to cook the beets)

  • 3 organic red beets
  • 2 organic yellow beets
  • 6 tbsp. (60ml) of fresh coriander
  • 6 tbsp. (90ml) of olive oil
  • Juice of 1/2 of organic lemon
  • Hummus
  • Salt and pepper
  1. Cook the beets in water with coarse salt for about 25-30 minutes, depending on their size. Verify with a knife. You can cook them ahead or the day before. Peel them when they’re cooked and colder. It will be much easier than if you do it when raw.
  2. In a small hand chopper, put the oil, the lemon juice, the coriander, the salt and the pepper. Mix until it’s all well blended. That will be your vinaigrette.
  3. Slice your beets and start to assemble them with the hummus.
  4. First place the red beet, spread about 1 tsp. (5ml) of hummus. Repeat with the slice of yellow beet with another teaspoon of hummus and finish with a last slice of red beet.
  5. Put a few drops of vinaigrette on top, some fresh pepper and serve with a few lettuce on the side.

This is without a doubt one of the most delicious salads. In addition to that, I use fresh peaches rather as beets, and I also add a few slices of fresh cucumber.

The only thing that I changed was to put a little bit extra vinaigrette on top of the beets so that the sweetness of the beets would be balanced out.

This is such a delicious dish! I’ve tried it twice, and both of those experiences were enjoyable.

10. I added grilled chicken and some grilled bell peppers. Roasted sweet corn was also included by one of the readers. Its delicious!! Both my husband and my kid rated it a perfect 10.
