Green soup for the week

A substantial soup with a lovely green color and, more importantly, vitamins and proteins? Indeed, it is the Green soup I cooked last week when winter decided to pay us another visit. I wanted to share this recipe with you since my kid appreciated it (even with the red lentils she wouldn’t have eaten otherwise).

Time to prepare: 10 minutes

Time to cook: 30 minutes

  • Coconut oil
  • 6 cups of water
  • 1 onion
  • 1 broccoli
  • 15 asparagus
  • 1/2 cup (125ml) red lentils
  • 1 tsp. (5ml) of curcuma
  • 3 tbsp.(45ml) nutritionnal yeast
  • salt and pepper
  • Melt the coconut oil over medium heat and add the onion. Stir them for 5 minutes until they start to become clear. Then add the broccoli, the asparagus, the red lentils, the curcuma and the nutritional yeast. Put some salt and pepper. Add 2 cups of water and scrub the bottom. That way you are building your broth. Bring it to boil and add 2 more cups of water. Again bring it to boil and add the balance of the water. Let it cook for 20 minute. With a hand mixer or with a food processor, blend the soup to cream it.

The soup was really creamy and flavorful.

The fresh flavor of the lentils appealed to me.

It didn’t have a strong taste and wasn’t too buttery. I believe I would cook this soup again and again since it is simple to prepare and incredibly healthful.

I enjoy it since I dislike blending my meals and I appreciate how creamy it was.

I liked how the vegetables were mixed together and how it looked.

I enjoyed everything in this soup; I believe it is quite good. My spouse and children enjoyed the soup as well, however my son did not like for the red lentils.

I loved the soup since it wasn’t too creamy, but I didn’t like for the lack of veggies, thus I suggest this:

1)Sauting the onion in coconut oil is one of my favorite methods of cooking this soup. 2) This soup took 30 minutes to get creamy. 3) To add some additional protein sources, serve Green Soup with Quinoa and a bit crispy avocado.

This was fantastic! It tasted delicious and was fast and simple to prepare.

They were fantastic! My mother is coming into town this weekend, and she will adore them just as much as I do. The recipe was absolutely successful for me.
