Since I miss summer so much, I prepared myself a fruit salad with plenty of fresh ingredients so that I can think about it a little bit.   1. In your salad bowl, whisk all the ingredients for the dressing until you get a smooth texture.
  2. Add in your kale, the strawberries and the hemp seeds. Toss it to mix it well and set aside for 5 minutes.

Yesterday, I prepared this dish, except I substituted blackberries for the strawberries and added cherries to both the blackberries and the strawberry mixture.

This is such a delicious dish! I have successfully cooked it twice. My first experience was with some very ripe strawberries that I had grown in my own yard. The second time I attempted it, I used frozen strawberries that I had purchased when they were on sale at the grocer. That is the ideal salad for the summertime! The only thing I did differently was swap out part of the hemp seeds for chia seeds as I was making the recipe.

This is one of my all-time favorite recipes, and maaaan, every single time I make it, folks are blown away by how easy it is to prepare while yet having wonderful flavor. I’ve tried it with both fresh and frozen strawberries, and both versions are as delicious. This time around, I added some fennel to the mixture. Mmmmm.
