There might be a number of factors contributing to your decision not to consume eggs, but I highly doubt that dislike of eggs is one of them. I miss egg salad a much, so I decided to prepare no-eggs salad instead! Because you won’t have to wait for the eggs to boil, the process is both speedier and less complicated overall.
Time required for preparation: 15 minutes
- 1/2 block or 225g of organic tofu
- 1 finely chopped organic celery stalk
- 1/2 finely chopped organic red bell pepper (or any colour)
- 1/2 cup (125ml) of finely chopped fresh parsley (or any fresh herb)
- 1 medium grated organic carrot
- 2 tbsp. (30ml) of organic lemon juice
- 1 tbsp. (15ml) of nutritional yeast
- 1/4 cup (62.5ml) of organic vegan mayo
- 1/4 cup (62.5ml) of plain almond yogurt
- salt and pepper
- Organic nori sheets
- Rice sheets
- Dice your tofu and put it in a small food processor, pulse until you get a crumbled texture, close to a traditional egg salad.
- Now, prepare your salad dressing in a small bowl, you combine the mayo, the yogurt, the turmeric, the lemon juice, the salt and the pepper.
- Put in a medium bowl, the crumbled tofu, the celery stalk, the bell pepper, the parsley and the nutritional yeast.
- Now, you just have to assemble your tofu mix with your dressing. Leave it aside for 5 minutes, so the flavours can blend. There it is, just as simple as that!
As I always do, I asked my readers to take part, maybe tell me what they think about my recipes and give me some tips, as well. What do they think of this one? Do they like it, did they make someone important to them happy with it? Did it help them save some time? Simply, what do our readers say about this recipe? Here it comes:
This evening, I prepared this dish for my boyfriend, his mother, and myself. Such a stunning development! Even though I don’t follow a vegan diet, I like trying out new dishes that use tofu and are good for you. This one was just fantastic! It doesnt look like egg salad, of course, but it tastes like it. You get the impression that you are consuming something that is familiar, but in reality, you are not. I want to express my gratitude to you for posting this recipe on your fantastic blog:
I am not a vegan, but I am making an effort to consume more organic foods. It is quite challenging for me to prepare vegan cuisine.
I created this dish so that I could bring it to a dinner gathering. The dinner party did not have any vegan options. Since I was certain that everyone, vegans and non-vegans alike, would like this meal, I decided that it would be the best option for me to bring it. That was really well received by everybody! To be very honest, I did not believe the tofu had much of a flavor on its own; but, when it was mixed with the other components, it was delicious! The salad was given a pleasant crunch that was enjoyed by everybody thanks to the addition of some nori crumbs during the mixing process. The only thing I will change for the next time is to make twice as much dressing since everyone requested more servings.
YES!! That has turned into the dish that I serve whenever I host guests for dinner at my house.
And, just a little message before I officially say my goodbyes to all of you: You are one thousand, no, one million, no, one billion, no, one billion times more great, pleasant, and fantastic than any of these recipes. Love you, love you all!
