If you eat kale cabbage uncooked, you will get so much out of it that it will blow your mind. But, raw does not always imply cold, so you can create this delicious pesto out of it and then reheat it in your hot pasta.

Time to prepare: 10 minutes

  • 4 cups (1000ml) of organic kale (I used purple)
  • 1/2 cup (125ml) of fresh coriander
  • 1/3 cup (83.3ml) of organic walnuts
  • 1/4 cup (62.5ml) of olive oil
  • 2 garlic cloves
  • Salt and pepper
  1. In a food processor, pulse the kale and the coriander until it is finely chopped.
  2. Add the walnuts, the garlic, the olive oil and pulse again until you start to get a smooth texture. Put some salt and pepper.
  3. Adjust the oil to your taste.
  4. Mix it in your favourite pastas.

This is a fantastic alternative to classic pesto with basil. It’s something I’ve prepared many times and it’s always great. It’s ideal for grain or noodle soups, over noodles, or over salad. And cleaning is simple. Just combine everything in one dish. I cannot suggest this dish highly enough.

This is incredible! My hubby like the flavor. I’ve made pesto numerous times but had never tried kale until today.

This is delectable. This pesto is really my favorite pesto. I served it with jasmine rice noodles, roma tomatoes, red onions, and baked tofu. This is fantastic.

I made it using pine nuts and basil instead.

I’m vegan, so I used almonds instead of walnuts, and I skipped the garlic, although I did add more salt than the recipe called for.

I made the pesto last night, and it was very delicious. It tasted similar to pesto from a restaurant, but much better! My family like it when I served it with homemade pasta (ziti). I would strongly suggest this to anybody who like pesto but does not want to spend money on a jar of it at the store.

This is very amazing! I like various sorts of sauces, not only pestos.

During the weekend, I prepared the pesto and served it with grilled fish and baked potatoes; it was fantastic! I’d never tasted kale before, but I was pleasantly pleased… delicious! I can’t wait to try out some of the other recipes on this site!

TRY IT! You will not be sorry. It’s very simple and delicious. And you can eat raw kale practically every day of the year and not grow tired of it.

Combining raw kale with lemon juice is a great way to get the most of this superfood.

I’d never tasted kale before, but it was delicious. The pesto is fantastic! This is a recipe I will certainly cook again.

Extremely tasty! It’s fantastic for you:)

This is fantastic. I really enjoy the kale pesto I prepared, but yours is much better. It has a fresh and wholesome flavor. Nothing like back home, where folks purchase pre-packaged pesto at the supermarket.

The best pesto recipe ever. It also gave me some ideas on how to utilize my homegrown basil.
