Ragout with onions and white beans

If you don’t have much in your fridge, that doesn’t mean you can’t have a great, delicious, and nutritious meal. To create this awesome ragout, you just need 3 onions and a touch of oil, and believe me, you’ll love it regardless!

Time to prepare: 10 minutes

1 hour of cooking time

  • 3 organic onions
  • 1 organic red bell pepper
  • 1/2 cup (125ml) extra-virgin olive oil
  • Salt
  • 6 finely chopped garlic cloves and one cut in half.
  • 2 tsp. (10ml) of tomato paste
  • !/8 tsp. (.625ml) of sambal oelek
  • 4 cups (1000ml) of thawed organic white beans
  • 2 cups of organic vegetable both
  • 1 cup (250ml)of organic tomatoes
  • 1/4 cup (62.5ml) of fresh parsley
  • 1/2 cup (125ml) of fresh coriander
  1. In a food processor or a hand chopper, finely chop the onions and the bell pepper. Not pureed just small pieces.
  2. In a pan heat the olive oil over medium. It may seem a lot of oil, but it gives a fairly good amount. Then add the onions and stir frequently so they don’t stick. Add salt and the sambal oelek.
  3. After 20 minutes, add the garlic and the tomato paste and continue the cooking for 10 minutes.
  4. Then you will get the base of your recipe. Just this part is so full of flavour.
  5. In a pot, transfer your onions mixture and add the white beans and mix well to cover them. Add your vegetable broth one cup at the time until it starts to boil. The sauce will start to thicken. Continue the cooking for about 20 minutes on lower heat.
  6. About 10 minutes before it’s ready, add the coriander and the parsley. Continue the cooking for about 10 minutes.
  7. In the meantime, prepare your rice or you can also serve this with quinoa or couscous.
  8. It’s a dish full of flavour, even better the next day.

During a hectic day, I had finished a delicious meal. This was an excellent dinner for someone on a limited budget. To thicken it out even more, I added more onion powder and an extra cup of white rice. It also required more salt, maybe another teaspoon or two.

The flavor combination of onions, bell peppers, and olive oil is delicious. My friends like the smoothness of the beans but felt they lacked a meaty flavor.

When my husband was gone on business, I cooked this dish for him. My spouse said that it tasted nearly just like Thanksgiving dinner!
