  • Olive oil
  • 1 organic red onion
  • Soup ingredients2 organic carrots
  • 1 sweet potato
  • 2 garlic cloves
  • 1 red bell pepper
  • 8 mushrooms
  • 1/2 cup of parsley
  • 1 cup of edamame
  • 1 1/2 cups of corn
  • 1 package of “chicken veggie tender”
  • 4 cups of water
  • 1 cup of almond milk
  • 2 tbsp. of vegan butter
  • 1 tbsp. of flour
  • curcuma
  • salt and pepper

Heat the oil in a big saucepan over medium heat and add the onions and garlic. Cook them for 5 minutes, or until golden. Cook for another 2 minutes before adding the sweet potato and carrots and stirring. You should have this golden fluid that begins to develop in your pot; make sure it doesn’t burn otherwise it will give your broth a scorched flavour. Combine the bell pepper, edamame, corn, and vegetable tenders in a large mixing bowl. Add the curcuma, salt, and pepper to taste.

I’ve never tasted better chicken chowder. It’s fast, simple, and highly healthful (which is important for me). The only thing I would add is some spicy black beans, like pinto or something!
