This recipe is an excellent foundation for a wide variety of pancake variations. If you add a couple of spoonfuls of flour at a time to the batter in order to make it thicker, you will be able to fry it up in a pan until it is fried golden brown on one side and then flip it over. You may make crepes by cutting the tortilla in half and spreading it with vegan margarine. Or, you can eat it as is with fruit or jam, etc. This is a fantastic meal, and I know that my wife will be relieved that I won’t be starting my day with eggs.
