Warm lentil salad with Du Puy lentils

  • 1 cup organic Du Puy lentils (250ml)
  • 1 organic vegetable broth cube
  • 3 cups (750 mL) water
  • 5 or 6 organic kale leaves
  • 1 red bell pepper, organic
  • 1 organic carrot, grated
  • 4 tablespoons (60ml) organic sesame seeds
  • 3 tablespoons (45ml) hemp seeds
  • 3 tablespoons (45ml) olive oil
  • 2 tablespoons (22.5ml) balsamic vinegar1
  • 1 teaspoon (5ml) dijon mustard
  • seasoned with salt & pepper
  1. Cook the lentils in the vegetable broth for 20 minutes, or until cooked. Remove any surplus water.
  2. Simultaneously, cook your quinoa according to package directions. Cooking time is around 15 minutes.
  3. Meanwhile, chop the pepper and kale, and grate the carrot.
  4. Combine the olive oil, vinegar, mustard, salt, and pepper in a salad bowl. Mix the veggies, sesame seeds, hemp seeds, and heated lentils in a mixing bowl. Mix everything together so that the flavors merge, the lentils soak the dressing, and the kale softens.
  5. Sprinkle it on your quinoa and you’ve got yourself a speedy supper.
